White Tea
White teas are the most elegant teas that has gone through the least processing. As they are not heated (as green teas are), they oxidize a bit, from 5-8%. A long time ago, white teas were considered the highest quality teas as they were picked only in the Spring, when the buds are covered by white hair to protect them from the chilly weather (hence the name white tea). Nowadays it's not correct anymore as white tea is cultivated throughout the year and even the bigger, older leaves most often are picked.
As white tea is the least processed tea, it contains a myriad of nutrients and antioxidants! Our white teas have a lot to offer and are very different from each other, so if you haven't tasted white teas before I'd urge you to do it now!
