Oolong Tea
Oolong is one of the most versatile tea types, and they vary from lightly oxidized to semi-oxidized and to high-oxidized, all of them are almost like different tea types on their own as the flavour is so different within these specific oolong types! The oxidation rate determines whether the flavor goes towards greener and lighter or towards darker and heavier direction.
The processing of oolongs is intricate and requires a lot of expertise from the tea producer. One switches between heating up (locking up flavors and creates freshness) and rolling phases (welcomes oxygen and creates more heavy-bodied flavours) multiple times, depending on what kind of oolong you want to achieve.
